Do you ever have one of those days where you can’t be bothered. It is 5:30pm. You are haaanngry. You know that your family will be hungry when they get home so you need something that is quick, easy and healthful to prepare.
Looking throughout my kitchen, I found a few things to aid in my quest for a stress free dinner. Microwavable cauliflower rice, egg, a chicken breast, and a couple of pieces of bacon that won’t be enough for a two person breakfast in the morning. Bacon Chicken Fried Caulirice it became! Below you will find the recipe.
Bacon chicken Fried Caulirice
1- 12 oz package of microwaved Caulirice
1 chicken breast cubed
2 bacon strips chopped in pieces
1/4 cup chopped onion
1 Tablespoon dark soy sauce (I used this!)
1 Teaspoon sesame oil (I used this!)
1 Teaspoon garlic powder
Chopped green onion
Fry bacon until fat is rendered. Add in chopped onion. Cook with bacon and bacon fat until translucent. Add chicken breast cook until done. Add caulirice. Turn the heat up a bit until Caulirice seems a bit dried out. Push Cauli rice mixture to one side of the pan. Use the clear part of the pan scramble an egg. Once the egg is scrambled mix Cauli rice mixture with egg in the pan. Cook a little bit more. Add soy sauce, garlic powder and sesame oil. Mix. It’s done. Add green onion on top of your serving.
This is a quick, delicious and savory meal.
